Thrifty Tips for October 18, 2012

RECIPES

With pumpkins for sale EVERYWHERE, you simply must take advantage of the healthy benefits of pumpkin seeds and make some of your own.  Also if you know anyone who will be doing lots of pumpkin carving (my youth group used to have a big pumpkin carving night), you might want to see if you can get your hands on the seeds.  Once you do, I've got a simple recipe for you.  Toasting pumpkin seeds is also a really nice family activity to do together.  I learned how to toast seeds before I knew how to cook much more than ramen noodles. 

1- Rinse clean two cups of pumpkin seeds (or whatever you have).  Leave on a brown paper bag to dry overnight. 

2- Preheat oven to 350 degrees and line a cookie sheet with parchment paper (not necessary but clean up is a breeze).

3- Lightly drizzle pumpkin seeds with olive oil and then toss with sea salt (you can add more spices if you like).

4- Spread seeds onto lined baking sheet and bake for 45 minutes stirring the seeds occasionally (I stir about every 10 minutes.  Bake until lightly toasted. 

Simple right?  You can switch this up with a few other recipes I located like TOASTED PUMPKIN SEEDS WITH SUGAR AND SPICE, MARYLAND PUMPKIN SEEDS, and SPICED MAPLE PUMPKIN SEEDS
