Menu Plan Monday - 1/11 to 1/17

I am so excited to have completed my first Menu Plan Monday, and now...here I am ready to do it again!!!! Yay! Seriously, this is huge for me. I cannot begin to tell you how nice it was to leave the office to pick up my son and NOT have to worry about what was for dinner. It was outstanding not to have to run to the store more days than I care to in order to pick up an ingredient that I didn't have on hand. I love this! I MUST offer major thanks to Laura of I'm An Organizing Junkie or OrgJunkie if you will. THANK YOU, LAURA!!!!! YOU ARE MY NEW HERO! Why am I shouting? Because seriously this little effort on my part has made a notable impact all ready!

Yes...I am seriously THAT excited! Okay...on to this week's menu.


Monday:

Roast Chicken with Lemons a green salad and ambrosia fruit salad for a dessert : This recipe is from Marcella Hazan Knopf. I posted this earlier this week, because I mentioned a way to stretch whole chickens that were on sale at Safeway. I decided that since I was going to take advantage of that sale, I might as well try the recipe this week too.


Tuesday:

Garlic Chicken Lettuce Wraps with Chicken Teriyaki rice (recipe from Thrifty Fun): This is another recipe that kind of fell into place when I was looking for recipes that can be made with leftover chicken. I am especially stoked because these kinds of recipes have made the darker thigh meat a lot more palatable for me. Another cool thing is this recipe is made with almost EVERYTHING I have on hand. :) I will be using iceburg lettuce for the cup with some extra green leaf lettuce rather than using the butter lettuce.


Wednesday:

Crock Pot White Chicken Chili
(RecipeZaar): I will probably use pinto beans rather than great northern beans, because I have the pinto beans on hand. And yep...I used this recipe for the chicken stretch. I really want to see how well it will work.


Thursday:

Soy-Marinated Pork Chops white rice and stir fried veggies: This was a recipe that my husband copied from a magazine for me. Thankfully, I found a copy of it to l ink to on MyRecipes.com. My husband has been a huge help with giving me some new recipe variety.


Friday:

Leftover hunt.


Saturday:

Hamburgers, homemade french fries, fruit salad.


Sunday:


Back to the leftovers.




My son and I had a long talk about what we want to accomplish this year and about how in a few short years he will be college age. We have decided to start a preparation plan for self sufficiency. As part of this plan, I will be helping Alex learn a new recipe a month. :) We figure if we tackle one recipe a month, he will be fairly well on his way by the time he graduates from high school. So next week, one of our days will be Alex's choice. Here's hoping it is not grilled cheese. Then again, it might be a good start. :)

What a great plan you've made with your son! That should be fun for both of you, make some wonderful memories, and give him a great start in independent living.

When I graduated from high school my mom was super distressed because she worried that I didn't know how to cook, but at least she'd taught me to value food enough that I moved out of the dorms to a place with a kitchen where I started experimenting on my own, and I gradually moved from quesadillas and tuna melts (oh man, those were the days!) to more and more complicated stuff. It took a few years to master eggs (make sure to include those in your son's lessons - they're harder than they look!) but now I can humbly say I'm pretty confident in the kitchen.
